Scientists have developed an innovative battery that uses a water-based electrolyte similar to the salty brine used in making tofu — a simple, non-toxic alternative to the hazardous chemicals found in conventional lithium-ion batteries.

This new design combines harmless mineral salts like magnesium chloride with organic electrode materials to create a battery that can withstand more than 120,000 charge cycles while being non-flammable and easier to dispose of safely.
